SUMMARY:

In Oenology, much has been discussed how a process can help reduce time and money and increase the quality of a wine, especially if this is a fine wine with aging potential. And many factors can help in this respect, one of them is the pH, responsible for improvements from the color to the taste of a wine. The relationship of Acidity and pH is inverse, when one is high, the other is soon low, and the correction to decrease the pH is currently mostly done by adjusting the acidity by adding tartaric acid, which is an acid naturally found in grapes. However, each cultivar has a buffering capacity, and in order to indicate the ideal dose of this addition, a laboratory analysis is necessary, which does not happen on a large scale, and may lead the wine to an imbalance in its pH, which would alter the entire function of its microbiological stability and, consequently, correction of sulfur dioxide, as well as tartaric stabilization. We therefore have an alternative that has been gaining ground in the oenological environment, which is the use of ion exchange resins, capable of removing 20% of its volume in a passage of potassium and releasing hydrogen into the solution, causing this reaction to lower the wine pH. The following project aims to unite the pH reduction process ratio of two wines from different regions of RS to an adequate dose for the correction of sulfur dioxide, thus leaving the wines stable and with greater storage capacity, proven through physical-analysis, chemical and sensory.
