SUMMARY:

Enogastronomy is a field in the area of oenology on the rise, promoting the harmonization of Brazilian cuisines with national wines is the next step for the dissemination of wine culture throughout the country. In this context, this work proposes the harmonization of northeastern cuisine with the wines of Rio Grande do Sul, specifically the Geographical Indications wines, thus valuing products with certification of origin that recognize the geographic, cultural value, and the gustatory and aromatic potential of this terroir. 4 Geographical Indications of Rio Grande do Sul were selected for this research, the (DO) Denomination of Origin  Altos de Pinto Bandeira for the (DO) Denomination of Origin Vale dos Vinhedos and the (IP) Indication of Origin for the Campanha Gaúcha and the (IP) Indication of Origin from Farroupilha. The objective of this research is to develop this harmonization of northeastern cuisine with wines from the Geographical Indications of Rio Grande do Sul. Through bibliographical research, some studies of food and beverage pairing were selected as a reference for choosing the methodology. The systematic review was also the basis for choosing the dishes and strains to be harmonized. For the sensory analysis, two sensory panels will be set up, one in Rio Grande do Sul and the other in the Northeast, where participants will taste 8 pairs of dishes with wines through sensory analysis in a controlled environment and, through a pre-elaborated and validated questionnaire, evaluate the tastings using the Likert-type scale. For a better experience, a complete dinner will be simulated (starter, main course and dessert). The results will be evaluated by Anova and Tukey tests. Studying, understanding and analyzing the possible combinations between northeastern cuisine and wine from Rio Grande do Sul, may encourage other Brazilian regions to make their own harmonizations with wines from Rio Grande do Sul, bringing greater recognition to the region, and adding value to the Brazilian product.
